Our Story
Gelataio was born from a simple belief: real gelato should taste like its source. Natural, honest, uncompromised.
Our founder's journey began in Italy, in the kitchens of Turin and Bari, where recipes have been passed down since 1942 and technique is learned through repetition, not shortcuts. He learned patience, precision, and the art of letting simple ingredients speak for themselves.
That discipline traveled with him to New York. In a city built on speed, he chose to slow down, experimenting with texture, temperature, and real ingredients, guided by a background in fitness and nutrition. One question shaped everything:
What if gelato could be both deeply indulgent and naturally clean?
