Our Story
Gelataio was born from a simple belief:

Our founder began his journey in Italy, training in the kitchens of Turin and Bari, places where recipes are guarded and technique is passed from hand to hand. There, he learned patience, precision, and the art of letting simple ingredients reveal their beauty.
That heritage traveled with him to New York.
In a city built on speed, he chose to slow down, experimenting with texture, temperature, and real ingredients, guided by a background in fitness and nutrition. One question shaped every creation:
